Bánh mì is one of the clearest examples of Vietnam turning an imported food into something entirely its own. The baguette arrived during French colonial rule, but Vietnamese bakers developed lighter loaves with thin, crisp crusts and filled them with combinations such as pâté, grilled pork, cold cuts, pickled carrot and daikon, cucumber, herbs and chilli.

The sandwich is built for speed. Small street carts and neighbourhood shops prepare them quickly for breakfast, lunch or a snack, with fillings changing by region and vendor rather than following one official recipe. That flexibility is central to the food’s character. Bánh mì is recognisable not because every sandwich is identical, but because the bread, fresh herbs, pickles and savoury fillings follow a familiar Vietnamese street-food logic.
